Fiesta Burgers

So, today, we started a new adventure. I became fed up with the amount of money we were spending on eating out...again. As a response, I've rededicated myself to: 1) stop being lazy, 2) start cooking, 3) making cooking fun, and 4) meal planning.

The easiest way to do this is inspired by the movie, Julie and Julia, but totally different because I: 1) hate cooking, 2) do not have the knowledge or skills to make amazing foods, 3) don't have time for gourmet French meals, and 4) suck at cooking.

Thus, we made changes for ourselves. Here's our plan. We are going to: 1) use one book at a time, 2) find recipes using many of the existing ingredients we have from stockpiling, 3) only use recipes that we will eat and that I, as a sucky cook, can do, and 4) keep track, somehow, of what we do and do not like.

Today, we made Chile Burgers. It's from this Betty Crocker cookbook for Easy Meals that are 30 minutes or less (or something like that). Here's the run down: 1) we used pickled jalepenos instead of chiles because we already had them in the fridge, 2) I actually touched raw meat and honestly kinda enjoyed making patties, 3) we had to phone a friend or five to make sure we knew how to broil, and 4) after eating them, we have renamed them "fiesta burgers" because they taste like the Mexican fiesta we make.

So, in conclusion: 1) we have three more recipes that we will be trying this week, 2) the fiesta burgers were delish - I had mine with tomato, lettuce and ranch; Jose ate his plain; and Jamie had one later as a snack with Chipoltle Mayo, 3) the sides of baked potatoes and broccoli filled me up and made me proud of eating quasi-healthy, and 4) I decided to blog about it and keep all 12 followers of this blog in the know about my delish food. If anyone wants my version of the recipe, let me know!

Fiesta Burgers

Ingredients:
1 1/2 lb. ground turkey (whenever I get to grocery shop and cook, I buy ground turkey. It's cheaper AND healthier! Plus, I'm not a huge fan of red meat!)
1 egg
1 C. chopped pickled jalepenos (I used the handy chopper to just ZZZP, ZZZZP! have ity bity juicy pieces.)
1/2 C. finely crushed corn chips (Awesome way to use those lil' boogers that don't get eaten at the bottom of the bag!)
1 small onion, also chopped (I used the chopper on this too. It's about 1/4 cup after chopped.)
2 T. minced garlic (we use the junk outa the jar.)
1 T. chile powder
1 C. shredded cheese (the recipe calls for Monterey Jack, we used the Mexican blend, whatever works for you)
Tomato
Lettuce
Buns
Other condiments you would like

Directions:
1. Mix all ingredients except cheese, tomato, lettuce, buns, and condiments in a large bowl. 
2. Shape into patties (should make about 6-8 depending on the size you want), about 1/2 inch thick.
3. Place patties on rack in broiler pan and set oven to broil on high (and for people who are cooking geniuses like myself, in a gas oven, your broil in the drawer that most people use to store pans. In an electric oven, you place the top rack on the highest spot because the coils are at the top of the oven. And, another tip, if you don't have a broiler pan, place a metal cooling rack inside a baking pan.)
4. Broil patties with tops about 5 inches from heat, about 8 minutes each side until medium "doneness" (I don't know if that's a word, but it's in the cookbook, so it's a go.)
5. Sprinkle about 2 T. of cheese on each patty and return it to the broiler until the cheese is all melty and yummy!)
6. Toast buns lightly using oven or toaster.
7. Top as desired and Nom, Nom, Nom! ENJOY!
